¾lb dry farfalle (bow-tie) pasta
2 cups (7oz) trimmed slender green beans, halved
1 orange or yellow bell pepper, seeds removed and thinly sliced
1lb skinless chicken tenders, halved crosswise
Salt and freshly ground black pepper
Half a bunch of scallions, sliced
1 garlic clove, minced
1 (15oz) can tomato sauce
1 tbsp balsamic vinegar
Small handful of fresh basil leaves, to serve
*Please note up to 10 short sprays of any cooking spray are Free. After that, count ½ Syn for every additional 5 sprays used.
1. Preheat the broiler. Spray the broiler-pan rack or a rimmed baking sheet with cooking spray.
2. Cook the pasta according to package directions, adding the beans and bell pepper for the last 6 minutes of the cooking time. Drain, reserving ½ cup of the pasta cooking water. Return the pasta to the cooking pot. Cover to keep warm.
3. Meanwhile, season the chicken with salt and pepper to taste and place on the prepared rack or baking sheet. Broil 3–4in from the heat source about 4 minutes on each side, or until cooked through.
4. Spray a medium nonstick skillet with cooking spray and place over medium heat. Add the scallions and garlic and cook, stirring often, about 2 minutes or until the scallions are wilted. Add the tomato sauce and balsamic. Bring to a boil and cook for 3–4 minutes.
5. Pour the sauce over the pasta and vegetables and place over medium heat. Add the chicken and toss to mix well, adding the reserved pasta water if it seems dry. Season to taste. Serve sprinkled with basil leaves.
